Maple Soy Glazed Trout

Filled with potassium, magnesium, iron, zinc, and calcium in concentrations 15 times higher than honey, maple syrup a natural alternative to processed sugar. Early settlers in Canada and the U.S. Northeast learned about sugar maples from Native Americans. The Ojibwa called the "sugaring off" period in March "maple moon" or "sugar month." Use a heavy or cast-iron skillet to make this trout recipe that takes a mere 20 minutes. A perfect balance of sweet and salty with a dash of ginger and garlic, it's an ideal weeknight meal.
Ingredients

1 large or 2 small trout filets

¼ cup soy sauce

⅓ cup maple syrup

1 teaspoon chili garlic sauce
Instructions

Whisk syrup, soy sauce, and chili garlic sauce in a shallow mixing bowl or dish. Add trout and coat, marinating for 30 minutes and turning occasionally. Drain the marinade into a small saucepan.

Heat a cast iron pan over medium heat. Add the trout and cook until slightly charred outside and just opaque in the center, about 3 minutes per side.

Boil the marinade until reduced to approximately 1/4 cup sauce, about 4 minutes. Place 1 filet on each of 4 plates, drizzle with sauce, and serve.
