Grilled Peach Bourbon Smash

Nothing says August like the abundance of local peaches. If you're ready for more than a cobbler, crisp or crumble, try this Grilled Peach and Bourbon Smash. At its heart, a smash is a wonderfully forgiving and flexible drink, made for hot days and for using what's on hand. Here, we take advantage of the season's bounty, and balance the sweetness of the peaches with the smooth and tangy notes of mint, ginger beer and bourbon. Smash it all together over ice, and serve up a little summer sipping bliss.
Makes 2 drinks
Ingredients
- 4 oz bourbon
- ½ large peach, sliced into thin wedges
- 8 large mint leaves
- 1 oz brown sugar simple syrup or maple syrup
- 1 oz of lemon juice
- Splash ginger beer or soda water
- Ice
- Fresh mint and peach slices for garnish
Instructions
Grill peach slices until soft. This allows them to caramelize and brings out even more sweetness.
Add mint leaves, syrup and grilled peaches into a cocktail shaker. Gently muddle.
Add bourbon and lemon juice to the cocktail shaker, fill it with ice and shake until well-chilled.
Strain into a rocks glass filled with fresh ice.
Top with ginger beer or soda water and finish it off with a sprig of fresh mint and a peach slice on top.
