    Jean-Pierre Ceccaldi began making the traditional Corsican knife, the 'curnicciulu', and over the years expanded his production to offer a comprehensive range of knives from traditional knives, like the « vendetta », to table knives, special pieces, kitchen knives, and pocket knives. These products are designed following the same traditional high standards : quality, authenticity and creativity.

    This kitchen knife is made from ram's horn and carbon steel. Carbon steel is razor-sharp and holds its edge for a very long time. 

    Care: Carbon steel will oxidise, and will acquire a grey patina over time. It is very easy to sharpen, which is a big plus for a knife that will be used daily. The tone used by Coutellerie Ceccaldi is, unless otherwise specified, XC75 (0.75% of carbon). The proper maintenance of carbon steel is critical, more so than that of stainless steel. It is therefore intended for informed users. The blade should be cleaned under running water after each use, and dried immediately, and stored in a dry place. If used less frequently, it may be appropriate to oil the blade before storing it in a dry place.

Coutellerie Ceccaldi is now officially recognized as an « Entreprise du Patrimoine Vivant (EPV) »  or “Living Heritage Company” by the government of France, a designation set up to distinguish French companies with remarkable tradition and industrial excellence.

    This kitchen knife is made from ram's horn and carbon steel.  Carbon steel is razor-sharp and holds its edge for a very long time. The trade off is oxidation, meaning they could rust. Looked after properly, however, they will develop a patina long before any rust can take root. Once the patina has developed the surface will no longer be susceptible to further corrosion. Should rusting occur simply use a kitchen scrubby (not copper or steel wool as this will scratch the surface) and warm, soapy water to remove anything that looks like rust.  Some discolouration is normal and will develop over time.
